What is caviar?
A delicious delicacy, caviar are the eggs from Sturgeon. These eggs are cured through a special process to optimize their preservation. All other fish species’ eggs are called “roe” but can be called “caviar” as long as the species name is mentioned first such as “Salmon roe caviar”. True caviar only comes from Sturgeon fish.
What types of caviar do you offer?
We offer a large selection of sustainable domestic and imported caviars from around the world, including Sturgeon caviar and roes from many other fish species. Most domestic roes, like our large Sturgeon caviar, are farm-raised. Salmon roe and domestic roe are caught in the wild.
How is your caviar sourced?
We have great relationships with some of the best suppliers around the world. Through our years of experience, we have selected who we feel are the most reputable and best-quality caviar suppliers worldwide. As changes occur in the caviar business, we will stay on top of the newest trends and supply our customers with the best products available.
Is your caviar sustainable?
Yes, all of our caviar is sustainable and ethically sourced. Some caviar farms are helping to promote the growth of the Sturgeon population by returning Sturgeon larvae to the wild to help the repopulation of the species. At Caviar Emporium, we endorse this action and support our suppliers with these efforts.
Are your products certified organic?
Since just before the millennium, cutting-edge technology has produced large Sturgeon aquafarms to raise large Sturgeon. This movement has allowed for the preservation of the Sturgeon species. These fish are endangered in the wild due to overfishing and environmental issues. The Sturgeon in these farms are monitored by veterinarians and live in a pure water environment. They are often given organic feed. The roe produced by these Sturgeon are all natural with no artificial preservatives.
How do I store caviar?
Store caviar in an airtight container, preferably glass if opened, and keep in the refrigerator between approximately 29 and 32 degrees Fahrenheit. We recommend you keep caviar in the consistently coldest part of the refrigerator, the bottom drawer.
What is the shelf life of your caviar?
If unopened and stored properly under constant refrigeration, caviar can last 2 to 3 weeks. If opened and refrigerated, the shelf life is around 2 to 3 days.
How do I know if the caviar is fresh?
Caviar Emporium offers the freshest possible caviar to our clients through our Just Before Shipping program. Ordering from Caviar Emporium ensures that you are getting the freshest caviar available. Sturgeon have their own unique characteristics and DNA, therefore each batch of caviar will have its own distinct qualities. Characteristics of some of the best quality caviar may include:
- Lustrous appearance
- Fresh aroma, reminiscent of the ocean
- Delicate, salty, and rich buttery taste
- Defined separation of eggs
Are there any health benefits to eating caviar?
Yes! High in vitamin B12, omega-3 fatty acids, calcium, and vitamin C, the health benefits of caviar may include support of the immune system, reduced inflammation, and healthier skin, to name a few.

How is your caviar shipped?
Located in Hunterdon County, New Jersey, Caviar Emporium ships via Federal Express next-day delivery. Alternatively, you can pick up your order at our Metropolitan Seafood & Gourmet:

Do you offer international shipping?
No, we do not. Import and export of caviar is closely monitored by a government agency called CITES (Convention on International Trade in Endangered Species).
What are your shipping rates?
We offer free shipping over $100 for local orders in NJ, NY, CT, PA, and RI. Orders under $100 and all other national orders have a $35 flat fee.
Can I track my order once it’s been shipped?
Yes, please email info@caviaremporium.com upon order placement to request the tracking information for your shipment.
What is your return policy?
All caviar orders are final and non-refundable. Any claim related to quality issues must be submitted by email within 24 hours of receipt to info@caviaremporium.com. We will get back to you to discuss the issue and work out a solution. If credit is approved, we will reship the order. Please be advised that partially consumed packages or discarded products are not eligible for return.
What if my order arrives damaged or with missing items?
Contact us immediately and we’ll do everything we can to make it right.
Payment & Pricing FAQs
What payment methods do you accept?
Caviar Emporium accepts all major forms of credit card. Keep in mind that we use Stripe as a payment processor.
Do you offer bulk or wholesale purchasing options?
Yes, larger size tins (up to 16 oz.) are available on our website. Please call us or email us at info@caviaremporium.com to discuss wholesale inquiries and larger volume orders.
Can I request specific packaging or customization for my order?
Special packaging in beautiful blue tins is available for all caviar sized 4 oz or larger. If you have any additional requests, please email or call us and we will do our best to accommodate.
Can I purchase caviar for events or special occasions?
Absolutely! In addition to our smaller 1 and 2 oz sizes, we offer 4 oz, 8 oz, and 16 oz tins of caviar to suit the size of your special occasion or event.
