Farm-raised due to its critically endangered status, these sturgeon take 10 years to produce eggs. But the wait is well worth it – this coveted caviar is abundantly rich in flavor.
It’s rare to come by because Russian Sturgeon are extremely difficult to farm raise; it takes 10 years for them to produce eggs. But this caviar is also highly sought-after for its rich and flavorful taste, texture, and color. The light-to-dark brown caviar has a firm texture and nutty, sweet flavor sure to please any palate.
Both of these caviars typically feature a higher price tag not only because they are difficult to obtain, but also because they offer a delectable culinary experience. However, you’d be hard-pressed to choose which is “better” – they both possess a unique and delicious flavor that tastes and feels luxurious.
Golden Osetra is known for its distinctive golden yellow hue, whereas the color of Russian Osetra can range anywhere from golden-light brown to dark brown. The golden variety of this caviar is more sought-after for its rarity, rich flavor, and association with royalty. Of all Osetra caviar sourced, only about 10% produce golden Osetra. It’s typically associated with an Albino Osetra Sturgeon.
