Wild Beluga is on the endangered species list, meaning it’s illegal for this caviar to be imported into the US. Sustainably and ethically sourced, our caviar is a Sturgeon hybrid of the Beluga (Huso huso), which features a very similar appearance and flavor profile to wild Beluga caviar.
Beluga caviar, like Osetra and Sevruga caviar, is rare because this Sturgeon species is endangered and has a longer maturation period. As with any other caviar, it should be kept cold – at around 29 to 32 degrees Fahrenheit. This ensures that your caviar stays fresh. We recommend you consume caviar within 2 to 3 days after opening and with constant refrigeration; if unopened, your caviar will stay fresh for 2 to 3 weeks as long as it’s constantly refrigerated.
