High-quality caviar should never have a strong fishy odor; instead, it’ll have an aroma reminiscent of the ocean. It should also have distinctly separate roe with a lustrous appearance and release a mild, briny flavor.
Once opened, caviar will last around 2 to 3 days if kept under constant refrigeration. If unopened and kept in the coldest part of your refrigerator, caviar’s shelf life is around 2 to 3 weeks. At 1 oz. per jar, the caviars in your caviar box are the perfect size for enjoyment without needing storage.
When metal (silver, nickel, bronze, etc.) touches the tongue, it creates a mild electrical current, creating an unpleasant, metallic taste. That current is increased even more when it interacts with salt – like natural flavors of caviar. Neutral materials like mother-of-pearl won’t interfere with the flavor and won’t damage the roe like metal does.
