Foie gras was discovered by Egyptians over 5,000 years ago. When harvesting livers from migrating geese, they learned that migrating web-footed birds gorged and stored energy in their livers before embarking on their long journeys. This is how foie gras was discovered and passed on to us. Rumor is that Foie Gras was introduced to Europe from the migrating Jews after the destruction of Jerusalem by the Romans.  The current European culture at that time was to preserve meat into country pate”. Since this was a traditional pork item, Jewish settlers who kept kosher introduced the art of Goose Foie gras preparation and it was embraced by the european culture. France in particular took this process, improved on it and Foie Gras became part of the French Food Culture.
